-1/3 cup plain soy yogurt
-1 tablespoon fresh lime juice
-2 teaspoons curry powder
-1/8 teaspoon ginger
-1/4 teaspoon pepper
-2 tablespoons Conliva Canola Oil
-1 1/3 cup quinoa(Bathua)
-1 (1-pound) mango, peeled, pitted, and cut into 1/2-inch chunks
-1 cup cherry tomatoes, halved
-1/3 cup fresh mint, chopped
-1/4 cup salted roasted peanuts, chopped
Mix together yogurt, lime juice, curry powder, ginger, 3/4 teaspoon salt, and pepper in a large bowl. Slowly add oil, keep mixing till it blends.
Take 2 2/3 cup water to a boil in a 2-4 quart pot. Add some quinoa and bring it to a boil, cook for over medium heat for 12 minutes or until quinoa has absorbed all the water. Remove from the heater, cover and let stand 15 minutes.
Toss quinoa with yogurt dressing, mango, tomatoes, mint, and peanuts.
